"Grilled boneless chicken breast with melted Provolone and grated Pecorino Romano cheese and thick slice of seasoned grilled eggplant, topped with RR Italian Peppers on warm Ciabatta bread " - Rose Romano


Ciabatta Bread

2 tbsp of Olive Oil

1 boneless Chicken Breast

1 inch thick Eggplant unpeeled

1 tbsp of RR Italian Peppers

2-3 slices of Provolone Cheese

1/2 tsp of Pecorino Romano Cheese


Season one boneless chicken breast and ½ inch thick slice of eggplant (unpeeled) with 2 TBS olive oil, salt and pepper to taste.

In a small pan, grill the chicken until golden brown. In the same pan on medium high (preheated), grill eggplant on each side two minutes (do not overcook). Cut Ciabatta bread for sandwich in half and lightly grill.

Assemble sandwich: one half of bread, 1 TBS RR Italian Peppers, thick slice of eggplant, ½ tsp Pecorino Romano cheese, chicken breast, 2-3 slices Provolone cheese1 TBS RR Italian Peppers and other half of Ciabatta bread. Reheat in pan with cover or microwave 20-30 seconds to melt cheese.
