"Grilled portobello mushroom and slices of seasoned eggplant with Asiago cheese and RR Italian Peppers, served on a hot Italian roll" - Rose Romano


1 large Portobello Mushroom

2 tbsp of Olive Oil

1/2 inc thick slice of Eggplant, unpeeled

2 tbsp of RR Italian Peppers

Asiago Cheese


Remove stem from one large portobello mushroom and cut a ½ inch thick slice of eggplant (unpeeled).

Rub both with 2 TBS olive oil and salt and pepper to taste.

Grill in a hot, nonstick pan for 1-2 minutes per side. Heat the cut Italian roll.

Arrange the sandwich in the following order: portobello, 2 oz. Asiago cheese, eggplant and 2 TBS RR Italian Peppers.

Reheat in pan with cover or microwave 30-45 seconds to melt cheese.
