"Grilled slices of seasoned zucchini with melted Fontina cheese, topped with RR Italian Peppers" - Rose Romano


2 large firm Zucchini, unpeeled

2 tbsp of Olive Oil

1 tbsp of RR Italian Peppers

4ozs. of Fontina Cheese

Salt and Pepper


Take two large firm zucchini (unpeeled) and cut lengthwise in ½ inch thick slices.

Season both sides of slices with 2 TBS of olive oil and salt and pepper to taste.

In a large pan, on medium high heat, grill the zucchini for 1-2 minutes on each side being careful not to overcook.

Top with slices of Fontina cheese (4 oz.) and the desired amount of heated RR Italian Peppers.
